   Hi Claire. I loved this! Although carrot ice doesn’t seem so weird – unless that was actually a frozen carrot?! Freshly harvested and juiced carrot it so sweet, so it could actually be a quite pleasant treat. I may just have to give it a go… I’ll let you know how I get on…

     It looked like they actually froze a carrot! Still the kids seemed to enjoy it. Carrots are very sweet, roasting them brings that sweetness out. Please do let me know how you get on. When my daughter was a baby (she’s now 14), one of the mum’s in my antenatal class gave her daughter so many carrots (at least twice a day) and her skin started to turn orange. I’m not joking.
